How to Stretch Your Dough and Make a Great Pizza

Have you been invited to one of my Pizza Party Gatherings but have no idea of what to expect or how to make a neapolitan-style pizza? Have no fear! I've created a simple little video that will take you through the steps of creating a great pizza on your first try. If you're in a hurry or just a reader, a video synopsis is found below the video. Steps Outlined in the Video

Use a ceramic tile as the pizza-making workstation.
(There will be only 5 or six tiles out a a time to prevent a backlog of orders at the oven)
There will be an assembly line of ingredients, kind of like Chipotle. Start at the end with the dough (Doh!).
Use the metal can (aka FLOUR SPRINKLER) to lightly dust your ceramic tile.
Choose your perfect dough ball. Make sure it is "THE ONE".
Open and then gently flip-over the tupperware container, allowing the dough to fall out of the container and into the small bowl of flour.
Get both sides of the dough lightly (LIGHTLY) covered in flour so it won't stick to your fingers.
Gently toss the dough back and forth between your hands twice to knock-off excess flour.
Place the dough onto the ceramic tile.
For the next step of making the "crust", you need to make your dominant hand look like it's trying to open a large jar of pickles.
With your pickle-lid-grip hand, gently press your fingertips into the dough and rotate it, lifting your hand and reinserting several times to make crust edge, officially called the "cornicione".
From here, find a way to stretch the inner part of the dough. I usually use my knuckles and drape the dough as I rotate it and let gravity stretch it out. If you want to try to toss the dough, use your knuckles and go for it!
Once the dough is stretched, sprinkle a little more flour on tile and place the pizza round back on the tile.

TOPPINGS
Neapolitan pizza needs light sauce because the pizza will cook in about 2-3 minutes.
Put on and LIGHTLY smear about 3 spoonfuls of sauce. DON'T PRESS DOWN ON THE SPOON. Doing so could make the dough stick to the tile which makes it hard to transfer into the oven.
Add some cheese and other toppings. You should still be able to see some sauce under the toppings when done. Too many toppings may make your pizza a bit soggy.

COOKING
Bring your tile to Ryan and he'll cook it in the oven!
Wait two minutes, get the pizza, slice it and enjoy!

72 Hour Pizza Dough Recipe

Ever been to a pizza party and thought, "Gee, that was delicious! I wish I could make pizza like that at home". Well, now you can. Here's a quick calculator I made in Sheets. Just enter how many personal pizzas you'd like make in the yellow box and the calculator will the rest for you. In order to recreate the dough consistently you'll need a kitchen scale to weigh your ingredients. You can find a scale starting at $15 on Amazon.

The Ingredients

What to do With Those Ingredients

In large measuring cup stir and soften yeast in the tap water (at least 5min).
Sift flour into mixing bowl.
Mix in salt w/ dry flour in the main mixing bowl.
Stir in oil to water/yeast solution
Put mixing paddle on stand mixer and turn on to low setting
Slowly pour water/oil into running stand mixer
Stir for a minute or two on low speed until all the water is absorbed. It'll be a lumpy mess.
Turn off mixer. Scrape paddle and sides of bowl, then cover bowl and dough lump with plastic wrap or a towel for 35 minutes. This is a generic autolysing method.
After 35 minutes, attach a dough hook to mixer.
Knead bread at “2” for 10min
Let dough rest 2 min
Knead at “5” (medium) for 2min.
Place enitre lump of dough into large tupperware or bucket at room temp for 24hrs. Then refrigerate entire dough mass for another 12-24hrs in the bucket.
Slice dough into appropriate weights. Ball them (see video above) and place into individual oiled small tupperware.
Place dough balls (in their containers) into fridge for up to another 72hrs.
Take out of fridge about 40 min before using.
Make a great pizza!
